Organic single-vineyard wine made from grapes of the Greek variety Xinomavro.
Vineyard:
Platanos 5-10% slope at prehistoric Theopetra Cave foothills at 230m/755ft altitude.Soil: Sandy clay Subsoil: SlateMesoclimate: Continental with a balancing influence of Pindos Mountains and Pineios River. Characterized by rainy cold winters, sunny, hot and dry summers and high diurnal temperature range.
Yield:
37hL/haHarvest: 3th week of SeptemberVinification: Prefermentative maceration for 4 hours and free-run juice partial draining (saignée method). Fermentation in stainless steel tank at low temperatures. Aging on lees for 40 days.Tasting notes: Wine with pale salmon-pink color, intense fruity aromas of pink grapefruit, white peaches and raspberries. On the palate, it is round and aromatic with botanical finish.Goes with: Seafood, dishes with tomato sauce and charcuterie. Aging potential: Keep for 1-3 years
